Wheat germ oil is extracted from the germ of the wheat grain. The oil is extracted from the seed which is separated from the residual grain using the cold pressing or extraction method. Wheat germ oil is one of the most precious oils. The oil yield is so low that approximately 16,000 kg of wheat is needed to obtain one liter of oil. Wheat germ oil has a very high vitamin E content. 100 grams of oil contains about 200 milligrams of vitamin E. Also larger quantities of provitamin A and lecithin can be found in wheat germ oil.
Wheat germ oil has an orange-yellow colour and a pleasant grainy taste. It does not tolerate heat. The oil is best used to refine green salads, raw vegetables, vegetable salads and dips.
Due to the number of polyunsaturated fatty acids, wheat germ only has a short shelf life. Once opened for use, the oil should be used within 2 months. The bottle should be stored tightly sealed in the refrigerator.
