Honey consists of about 200 different ingredients. The composition can vary widely depending on the type of honey. The quantitatively most important ingredients are fructose (27 to 44%), glucose (22 to 41%) and water (about 18%). Other typical ingredients are other sugars, pollen, minerals, proteins, enzymes, amino acids, vitamins, colours and flavours. Honey can be liquid or crystallised. The form it takes depends mainly on the ratio of the two simple sugars fructose and glucose and also depends on how the honey is processed and stored.
