Delicious Bread Recipes by Kotányi

Bake not only biscuits for the holidays, but also really good bread!

RECIPE 1: Mediterranean Bread Flower with Herbs

(Ingredients for a flower-shaped bread with around 15 pieces)

You will need:

Method:

  1. Take all the dry ingredients (flour, salt, sugar, dry yeast and the Kotányi bread spice) in a bowl and stir well.
  2. Add 380ml lukewarm water.
  3. Start out by mixing with a wooden sppon. Then knead well for about 5 minutes.
  4. Cover and let the dough rest for about 60 minutes at room temperature.
  5. Knead the dough again and divide it into fist-sized pieces. Shape the pieces into balls and put them together in the shape of a flower.
  6. Let the shaped dough flower rest on the baking sheet for another hour. Preheat the oven to 250°C, top/bottom heat, and place a small bowl of water in the oven.
  7. Bake for 30 minutes at 250°C. Reduce the heat to 200°C and bake for a further 15 minutes with a toal baking time of 45 minutes.

RECIPE 2: Olive-Garlic Bread

(Ingredients for approx. 5 flatbreads)

You will need:

Method:

  1. Mix the dry ingredients in a bowl (flour, baking powder, salt and the Kotányi spice mix).
  2. Add water and olive oil and knead into an smooth dough.
  3. Cover the dough and let it rest for about 10 minutes.
  4. Divide the dough into 5 equal pieces and shape into balls. Roll out each ball into a round flat shape about 1 cm thick.
  5. Heat some olive oil in a pan and cook each flat bread on both sides until golden brown.

RECIPE 3: Onion and Herb Bread

(Ingredients for approx. 5 servings)

You will need:

Method:

  1. Mix the dry ingredients together in a bowl (flour, salt, sugar, yeast and the Kotányi spice mix) and add 350ml lukewarm water.
  2. First mix well with a wooden spoon, then knead well for about 5 minutes.
  3. Cover the dough with cling film and leave in the refrigerator overnight.
  4. Before you start shaping the dough, let the dough stand at room temperature for an hour.
  5. Divide the dough into two pieces. Shape each piece into a long piece about the thickness of your fist.
  6. Shape the dough by folding each piece 3 to 4 times. Rest on a baking sheet for about 15 minutes.
  7. In the meantime, preheat the oven to 250°C top/bottom heat.
  8. Bake for 25 minutes at 250°C. Then reduce the temperature to 200°C and bake for a further 15 minutes.
