Paella is the internationally popular Spanish rice dish from Valencia, and is prepared in a pan. The name comes from the Catalan or Latin name "Patella" for "pan".
The Original Paella from Valencia consists of rice, chicken, pork ribs, rabbit and vegetables - especially grated tomato, red pepper pods cut into strips, green beans, sometimes quartered artichoke hearts and "garrafones" which are large, flat, white bean seeds.
In the international interpretation of this dish, the meat is also often replaced with seafood, fish, shrimp or shellfish. Or you can combine chicken wings with squid rings, mussels and shrimp tails.
Vegetarians can also enjoy paella! Try it with red and yellow peppers, zucchini, spring onions, mushrooms, peas and artichoke hearts.
Paella spice tastes wonderful with Mediterranean risotto, pasta, vegetables, couscous, fish sauces, tomato dishes and casseroles.
Fry fish, meat or seafood briefly in olive oil; then remove from the pan and keep warm. Sauté onions and peppers in the pan; add vegetables (tomatoes, peas, beans, artichokes) and cook for about 5 minutes. Braise.
Now spice with the paella composition. Add cooked rice and deglaze with broth. Simmer over medium heat until the liquid is absorbed by the rice, for about 20 minutes.
Add the meat or fish or seafood to the rice. Heat on low for about 15 minutes. Garnish with lemon and parsley to taste.
Add the spice mixture before adding the rice.
Use risotto or short-grain rice, like Carnaroli. This will make your paella really creamy.
