Description
Originally cardamom came from India and Sri Lanka, today it is grown in many tropical countries.
The seeds contain an essential oil which gives them a spicy, sweet-tart flavor. As the oil evaporates easily, you can also use a mortar or grind the seeds at home only when needed. This will keep the flavor from being lost.
Cardamom seeds are a common spice in Asian cuisine and are among the main ingredients of Indian masalas and curry powders.
Apart from curry powder, cardamom is used in European cuisine at Christmas time for baking sweets such as gingerbread and biscuits, but is also for sausages, liqueurs and as a constituent of spice mixes.
When preparing Arabian mocha coffee, cardamom is also often used.
Tip:
The cardamon seeds spare you the world of removing the shell.
