Blue tea, also known as "anchan", is made from 100% butterfly pea flowers. A traditional Ayurvedic drink, it fascinates with a rare play of colours: the infusion turns tea water into an intense cobalt blue and adding a little lemon juice turns the blue into a strong violet colour. Together with rosehip or hibiscus, the colour changes to display reddish nuances. Its taste is mild and herbal, interspersed with gentle wood notes.
