The violet cardamom comes from the same plant as the black cardamom, but it is not smoked. The violet cardamom achieves its juicy, spicy-sweet taste when it is very ripe. It has a strong eucalyptus note and is ideal for stews, hearty meat soups, vegetables and salads.
