Zotter Chocolate H2O Superfood Chocolate

Inspired by the Mayas and the traditional chocolate culture which is still very much alive in Belize, Josef Zotter has developed this dark chocolate water based ganache, following the Mayan recipe. Cocoa and water means a reduction to the bare essentials and is the basis of the entire chocolate culture. This puristic dark chocolate ganache is spiced up with a whole lot of superfood ingredients such as chokeberry juice, maca, candied ginger, cardamom, chilli and moringa powder.
Even the couverture chocolate contains superfood power. For this, Peruvian cocoa is processed basically raw and unroasted and it is only dried at 70°C. Due to the heat that is nonetheless generated during grinding and conching, antioxidants are lost. For this reason the couverture chocolate is spiced up with superfood ingredients such as acai, matcha green tea powder, chlorella algae, reishi mushrooms and maca powder after processing – only in small doses, though, to keep one’s feet on the ground. Overall very flavorful!
