The Silver Fir was Austria's Tree of the Year in 2015. Climate change is posing a serious threat to these noble trees. Protecting these trees is important as they can live 500-600 years naturally.
The praline ganache for this chocolate was soaked in homemade silver fir brandy. The liquor was made using pine branches and sugar cane brandy, then mixed with a ganache of milk, honey, and a little Mascabado nougat and caramel couverture.
To make this sweet greeting complete, the bar was coated in dark milk chocolate couverture with 60% cocoa and finished with a hint of mace.
