- Unlike blossom honey, forest honey is not made from nectar, but from the honeydew that the busy bee colonies collect from the needles and leaves of the trees. This strong flavoured honey has a slightly bitter, resinous aroma. Hoyer sources the honey from organic beekeepers in Piedmont, Italy. Besides the strong flavour, forest honey is characterised by its dark colour and low glucose content. As a result, it does not crystallise as quickly as other types of honey and remains liquid longer.
