Spice for Life Red Voatsiperifery Pepper

Voatsiperifery pepper is one of the rarest types of pepper in the world and is used by top chefs as a secret ingredient for seasoning and refining a wide variety of dishes. It grows in the jungles of Madagascar on the young shoots of the trees which can grow up to 20 meters high and is hand-harvested in the traditional way by many private smallholders.

The earthy-woody aroma at the beginning quickly develops into a herbaceous, dill-heavy note with citrussy and floral flavour - a real treat for the palate! It goes perfectly with lamb, game, fish and exotic curries. Also wonderful with salads and dark sauces.

Tip: Grind the peppercorn in a mill or mortar just before use in order to preserve the aromatic essential oils.
