This creation is a truly audacious flavour adventure. The star of the show is a 'brain layer' of blanched and caramelised pork brain, combined with butter, homemade eggnog, a touch of pear brandy, and almond nougat. A less-sweet, exquisite white chocolate expertly balances this unusual filling. Below this, a layer of delicate, melt-in-the-mouth hazelnut nougat is studded with finely chopped pieces of cashew, hazelnut, and almond. An utterly madcap delight, all wrapped up in fine milk chocolate.
