About Beetroot + Beetroot Brownies Recipe

Today, many people want to eat more healthily. This doesn't mean you have to look into exotic superfoods imported from all over the world. 

Beets are easily found around the world and their healthy ingredients meet the demands for modern, healthy food.

Many varieties

There are many different kinds of beets, from sweet, earthy, round or oblong, red or brown. Because these vegetables can be stored perfectly over long periods, they are available all year round and provide important vitamins during winter. 

Healthy ingredients

Beets are characterized by a high nutritional value and low calories. They are rich in minerals such as calcium, phosphorus, iron, potassium and magnesium. Many vitamins of the B group, vitamin C and folic acid are found in beets.

Use

Contrary to popular opinion, beets are very versatile in the kitchen, and not just in salads or pickle jars. They are also an excellent side dish with meat or fish, taste great in soups and can be eaten raw. You can actually use for baking too.

Beetroot Brownies

Ingredients for 20 pcs .:

  • 300g Beetroot
  • 250 g dark chocolate
  • 100 g ground hazelnuts
  • 100 g coconut oil
  • 5 tablespoons honey
  • 3 eggs
  • 3 tablespoons coconut flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1 pinch of pepper
  • chopped hazelnuts to sprinkle over 

(Note: The brownies are not very sweet. If you like sweeter brownies, increase the amount of honey and coconut flour..)

Instructions

  1. Peel the beetroot and cook until tender. (200 g needs about 60 minutes to cook.)
  2. Preheat the oven to 180 degrees.
  3. Puree the cooked beet. Use a food processor to puree the beet. 
  4. Melt 150 g of chocolate in coconut oil. Coarsely chop the remaining 100 g of chocolate.
  5. Add the melted chocolate to the pureed beets and stir in the baking powder, ground nuts and coconut flour.
  6. Finally fold the chopped chocolate into the dough and pour into the pan. Sprinkle with chopped hazelnuts.
  7. Bake at 180 degrees for 40 minutes.
  8. Remove from the oven and let cool.
  9. Cut into pieces and enjoy!
